Blackberry and Apple Chia Pudding

This delicious chia pudding is packed full of fibre and omega-3 - Perfect for stable balanced blood sugar and if you can forage your blackberries fresh all the better. At other times of year they can be swapped for blueberries or raspberries for an array of polyphenols (the active colour compounds in food which help fight disease).

 

For extra protein you can add a tbsp of your favourite protein powder to the chia mix.

Ingredients

2 tbsp chia seeds

1 apple (skin on // grated)

1 cup of unsweetened almond milk (e.g. Plenish)

Handful of blackberries

Handful of chopped almonds

1/4 tsp of ground cinnamon

Method

In a large mixing bowl stir your chia seeds, almond milk and grated apple. You can leave this to set overnight (or for a minimum of 30 mins before eating).

When you are ready for breakfast simply add your toppings, blackberries, almonds, cinnamon.
